In From The Cold
Making and Serving meals for First United Church

An outreach program at Canadian Memorial is to participate in the In From The Cold meals program at First United Mission and Church, located in Vancouver's downtown eastside.

During the cold months, we prepare and serve a meal at First United one Friday night a month.  Some make stew (recipe below) and bring it to Canadian Memorial's kitchen by noon on the Friday, others bake a cake or contribute funds for other supplies.  Then a group of volunteers meet at First and put the meal together, serve it and do clean-up. 

Usually there are 100-125 people in the First United's neighbourhood that join us for dinner.  They appreciate not only the hot meal, but also the fellowship.

  Stew Recipe

Baked Beef and Vegetable Stew
(12 servings)

4 pounds (2 kg) stewing beef trimmed and cut into 1 inch pieces
8 large carrots, cut into 1 inch pieces
4 stalks celery, cut into 1 inch pieces
4 medium onions, cut into eights
4 garlic gloves, chopped finely
2 (796 ml) cans tomatoes
2 cups (125 ml) beef stock
2 bay leafs
2 teaspoons Worcestershire sauce
1 tsp. dried marjoram
1 tsp. salt
1 tsp. pepper
2 cup frozen peas
 
Place all ingredients except peas in three quart (3 L) casserole, stirring to break up tomatoes.
Cover and bake at 325 F. for three hours or until beef is tender, stirring occasionally.
Add peas and bake, uncovered, an additional 15 minutes. 
Remove and discard bay leafs.
A little more liquid may be needed during the cooking time.
  
Ice cream buckets are available to put the finished stew in for transporting to the church.
